We firmly believe pies aren't only for winter, but we like to apply a lighter touch in warmer weather. Replace weighty pastry with sweet potato mash or crispy filo, and opt for a biscuit base in sweet pies. Or, if the sun's out, try a layered chicken, apricot & pork picnic pie or inventive Scotch egg pie.
